oh my apple pie!

   After dressing up and celebrating Halloween on October 26th, my actual Halloween night was spent going out to dinner, and then watching Hocus Pocus. To get in the spirit of things I also made mini apple pies! I threw apples and cinnamon sugar in the crockpot for a little while and I had some leftover dough from making supper the night before. Super easy and super cute (if I do say so myself)!

mini apple pie
(should make 6)

filling
2-4 apples
2 tbsp cinnamon sugar

crust
2 cup flour
4 tsp. baking power
2 tbsp butter
1/4 tsp. salt
2/3 cup milk
1tbsp melted butter

Dice apples into small cubes (no need to peel).
Toss apples in crockpot with cinnamon sugar and turn on low for a couple hours (I kinda forgot about them till 4hrs later and they turned out fine).

Combine crust ingredients (except melted butter) in a bowl, roll into a ball and refrigerate for at least 2 hours. 
After refrigerated roll the dough out and then cut into circles for the bottom pie crusts. 
Place circles into greased muffin tray then cut out desired shapes for the top crust (get creative!).

Preheat oven to 350°.
Fill the crusts with the apple filling and put desired dough shape on top. 
Brush melted butter on top.
Pop in the oven for 20 minutes or until the crusts start to turn golden.
Cool for 5 minutes.
Enjoy!!

moving in

   Moving is always a lot of work. Packing, sorting, cleaning, moving, unpacking... the list goes on! I soon discovered the hardest part of this move was going to be figuring out where to put all.my.stuff. Andrew has already lived in this apartment for a couple years, so he was comfortably settled in before the move. Luckily, Andrew's been awesome about adapting and changing some things around to really make this space ours.
   Here's the progress so far of the spare room, which was briefly a man's cave/den, and is now a tiny work room that we share!
This room is so tiny, it's super difficult to take decent pictures. This is what was to the right; Andrew's guitar, Andrew's bookshelf and a leather chair.


We switched the chair to the far corner and added another bookshelf for my books, crafting needs, and teacher things.

And here's a quick little floor plan to show you the new layout thanks to floorplanner.com (how cute is that little guitar)! I didn't take the time to put in the true measurements but it shows the desk and closet setup on the other wall which we have yet to tackle...

Hopefully we come up with some more ways of decorating and living in our small&cozy apartment! Let me know if you have any tips!!

one pan chicken alfredo

  Today was one of those days where it was hard to get motivated. Even after a shower I just wanted to sit in bed and mope around, but I forced myself to go out and pass out another resume. Since I was out I went for a walk in Bowring Park before coming home and trying out a new recipe!

Supper was a success thanks to Melissa at number-2-pencil.com and her one pan chicken alfredo (check it out here!), with a few changes. I decided to add broccoli and instead of using heavy cream I used 3/4 cup of 1% milk, (roughly) 1/4 cup butter, and some flour to thicken the sauce. Over all I think it was a success because Andrew went back for seconds and we barely had any leftovers!



**(plus some broccoli I decided to add in last minute!)







After eating and cleaning up the (very few!) dishes, we had plenty of time for a brisk walk before the sun set! I could get used to not having to spend my evening washing dishes...

reminders

Sometimes you just need a little reminder that you can't change what happened yesterday and you don't know what tomorrow will bring. When this image came up on the frontpage of instagram I immediately made it my lockscreen image on my phone. That was around 5 month ago, and it's still there to remind me every day.

hello!

So, I've finally decided to just start blogging. Who knows where this will go, but it's worth a shot. My posts will focus on things in my life (I'm Mae) on a day by day basis. The beauty of this is that I won't be worrying about what this blog will be in a year (if I'm still updating it by then haha), I'm going to focus on the present and start blogging in the moment.
